The best number depends on the amount of traffic your site receives and the amount of memory you have. There's no formula for determining the best number - you'll need to load test your site and experiment to find what works best for you.

The pro for running more processes is that your site will perform better under high traffic.

The con is that each process is a long-running process that counts towards the RAM allowance of your hosting plan. If you run too many processes and exceed your allowance, then our monitoring system may terminate your processes. They'll respawn automatically, but if our monitor is continually shutting you down, then your site isn't going to work consistently.
