I'f like to set up a domain for use with spamgourmet.com. They say that the preferred method:

... would be to get your ISP to forward all mail for the domain to the recipient
user @spamgourmet.com. For instance, with sendmail, your ISP could add a line like:

@youridledomain.com   %1@spamgourmet.com

in the virtusertable file.

Is there any way I could do that? Or, use some alternative approach? (Preferably one that I would have control over in case I want to modify things, eg. have one or two email addresses redirecting to some other domain or local mailbox.)

You only have basic mail forwarding options via our control panel and no access to the virtual user table. You should be able to use their secondary method:

  • Forward yourname@youridledomain.com to spameater@spamgourmet.com
