My application will be tricky to cache, so I'd like to hold off on that for now. But I'd like to start load balancing in the meantime. Does anyone have any pointers on setting up varnish to do only load balancing and pass through requests without caching?

I think the answer is to just not enable caching on the Plone side (CacheFu for older Plones). That way, caching headers won't get set.
